This is organic coconut sugar which is golden yellow in color, brighter, and has a more potent aroma. This sugar is produced by coconut sugar farmers who are disciplined in taking sap regularly. The weather factor is also very influential, and this is more dominant. But these two factors are the conditions for how golden coconut sugar is produced. For us, KUB Sumber Rejeki and Argalingga have this sugar 10% of the total coconut sugar production.
Golden sugar tends to dissolve faster, and we heat it in the sun to keep the sugar’s characteristic color from changing. Drying in the oven significantly affects the aroma, taste, and color.
